- 1 large ripe tomato, diced
- 1/4 cup red onion
- 1 large peach, diced
- 1 green bell pepper, seeded and diced
- 2 tablespoons Hot & Spicy Mexican Dip Mix
- 2 teaspoons white wine vinegar
- Mix all the ingredients well in a bowl. Refrigerate until ready to serve. Great accompaniment with baked chicken.
